chore: 🤖 remove Gemfile and Gemfile.lock
    
    The Gemfile, Gemfile.lock and all associated pre-processing work is
    baked inside the jekyll-theme-centos container image and dependencies
    are distributed statically. This reduces significantly the amount of
    complexity necessary to build the jekyll site.
